Crock Pot Pork Shoulder
4-7 lbs Pork Shoulder (aka Boston Butt)
1/4 cup water
Barbecue sauce (personally I make my own ahead of time)
Directions: Place pork in the crock pot (fully frozen). Add water and barbecue sauce to the pot. Turn the crock pot on low for 7-9 hours. Before serving, shred the pork, removing any excess fat and bones. Mix in additional barbecue sauce. Serve either plated with mashed potatoes or as a sandwich. Our family's personal favorite is either Kings Hawaiian Sandwich rolls or kaiser rolls.
Honey Mustard Pork Tenderloin
2 lbs pork tenderloin1 clove garlic, minced (aka 1 tsp)
4 tbsp grainy Dijon mustard
2 tbsp honey
2 tbsp brown sugar
1 tbsp apple cider vinegar
1 tbsp cold water
1 tbsp corn starch
NOTE: If preparing ahead to freeze, combine first six ingredients in a freezer safe ziploc bag. Mix ingredients in the bag then freeze. When ready to serve, remove from bag and place in crock pot. Cook as directed.
Directions: Mix the garlic, mustard, honey, brown sugar, and apple cider vinegar. Place the pork in the bottom of the crock pot. Then cover with the mixture. Cover and cook on low for approximately 7 hours. Salt and Pepper pork according to taste. Before serving, place juices in bottom of pot in a saucepan. Bring to a boil over medium heat. Simmer for 8 to 10 minutes. Combine the cold water and corn starch with the reduced juices, whisking for about a minute. Serve the pork gravy over the sliced pork.
Pineapple Pork Roast
3 lbs boneless pork roast (we prefer Pork Shoulder)
1 can 20 oz Pineapple chunks, undrained
1 cup dried chopped cranberries
1 tsp pepper
2 tsp salt
Directions: Place pork in crock pot. Sprinkle salt and pepper over roast. Pour in cranberries and pineapple (including juice). Cover. Cook on low for 7 hours.
NOTE: If preparing ahead of time, combine all ingredients in freezer bag. Mix ingredients in bag. Remove any excess air.
